This is a hand crafted cheese that combines traits from Gouda and another Swiss variety called Appenzeller. After one year of aging it is naturally smoked with apple wood. It is creamy with sweeter overtones and has a rich smoky flavour throughout. All of the milk used comes from our family dairy farm.
